Quick and Healthy Chicken Pasta Dinner

1 medium – large onion (chopped)

3-6 tbsp of olive oil

3 cloves of garlic

1 package of mushrooms (sliced)

4 chicken breast or 6 chicken thighs, cut into small bite sizes

1 can whole tomatoes

½ cup of sundried tomatoes

8 oz. mascarpone cheese

1 large bunch of fresh basil

1 package of fresh spinach

Your choice of pasta

Salt & Pepper to taste

Heaping tbsp. oregano

Parmesan Cheese

In a large skillet or sauté pan, heat olive oil and sauté chopped onions on medium heat. When onions begin to become translucent, add mushrooms and cook for a few (3-5) minutes. Add chicken and cook until almost done. Add garlic to mixture. Begin to crush tomatoes with your hands and add to mixture, then pour in tomato juice from can. Add sundried tomatoes. Stir in mascarpone cheese. Add basil, spinach, salt, pepper, and oregano. Turn down heat and simmer while pasta is cooking.

Heat water and salt in pan to cook pasta; cook pasta as directed. Drain pasta and toss in sauce. Top with parmesan cheese.

Will serve 6-8 people.
